Let me help you in review and reassessment of your current HACCP Plans or develop your new HACCP plans.  I have written many HACCP plans and reassessed many more that have been reviewed by USDA and FDA.  I have developed HACCP plans for USDA plants, Bakeries, Food Contact Packaging.

When I perform a re-assessment of your HACCP plans, I review not only your plans and records but your SSOP programs and pre-requisite programs.  For USDA plants, this is very similar to their Food Safety Assessments (FSA).  If you are going to have a FSA, let me know and I can come in ahead of time and review your programs and records to address any possible issues that they might bring up.
